The Noma - White
It’s not every day you find yourself seated at Noma, the world’s most celebrated restaurant. Rarer still is being invited by its head chef for a private tour through its surrounding woods. I thought we’d set out that morning for her to teach me how to forage. Instead, she showed me I’d been doing it all along.
Watching her work, it struck me. She didn’t just move through the terrain, she moved with it. She knew when to wait, when to act, and when to walk away. Noma was not only an award-winning restaurant because of what it created, but because of what it preserved. As in my own work, abundance prospered when it was met with pacing, selectivity, and care. To forage, I realised, is to move through your craft as you would a kitchen- grounded, alert, and trusting your senses. It asks for restraint, respect, and the willingness to keep learning, even from familiar ground.
That morning showed me the difference between a career that has a season and one that is evergreen. Most walk their path with eyes forward, chasing the next milestone. The masters move like foragers, steady and attuned. They choose with care and adapt with purpose, knowing abundance means nothing if you cannot sustain it.
